Lemon Drizzle Cake is one of my favourite cakes, particularly with a cup of tea. I think this goes right back to the fact that my mother made one nearly every weekend. I just love the moist cake and the tang of lemon and as I said I think it goes perfectly with a cup of tea.
Ingredients
Cake:
225g softened unsalted butter
225g golden caster sugar
4 large free range eggs
Zest of 2 lemons
225g self-raising flour
Lemon Drizzle:
Juice of 2 lemons
85g golden caster sugar
