Lemon Lime Coconut Sugar Cookies

A small batch of mini citrus cookies made with coconut sugar. They’re light, crispy and smell fantastic.

1 large egg yolk, at room temperature
1 teaspoon + 1/2 teaspoon melted coconut oil
1/4 teaspoon pure vanilla extract
1/4 cup coconut sugar
1/4 cup white whole wheat flour
1/8 teaspoon fine grain sea salt
1/8 teaspoon baking soda
1 teaspoon finely grated lemon peel (zest of 1 lemon)
1/2 teaspoon finely grated lime peel (zest of 1 lime)
