6 peaches (ruby pearl and diamond pearl if available) cut into wedges of 8
2 Tbsp butter
3 Tbsp honey
3 springs lemon thyme
For the Crumble
3/4 cup flour
1/4 cup butter
1/4 cup rolled oats
1/4 cup brown sugar
To serve
vanilla ice cream
thyme leaves
honey
