Lentil Loaf
Lentil loaf is a hearty, stick to your ribs type of vegetarian meal. Serve alongside mashed potatoes and a green veggie and you won’t be missing the meat!
1 cup brown or green lentils
3 cups low sodium vegetable broth
2 tablespoons olive oil
1 stalk celery, diced small
1/2 onion, diced small
2 carrots, finely shredded
1 heaping cup mushrooms, chopped small
2 cloves garlic, minced
2 tablespoons ground flax plus 6 tablespoons water
1 tablespoon Worcestershire sauce
1 cup oatmeal (quick oats or pulse regular oats a few times in a food processor or blender)
1 teaspoon dried Italian seasoning
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons ketchup
1 1/2 tablespoons balsamic vinegar
1/2 tablespoon maple syrup (not pancake syrup)
