Mediterranean Quesadillas with Roasted Garlic Hummus

These quesadillas are stuffed with two kinds of cheese, Sabra’s roasted garlic hummus, kalamata olives, roasted red peppers, and a little arugula. It comes together in just minutes with ingredients you probably have on hand.

1 teaspoon olive oil or olive oil spray
2 flour tortillas
Feta cheese, crumbled
Shredded mozzarella cheese
Chopped kalamata olives
Sliced roasted red peppers
Sabra roasted garlic hummus
Arugula
Chopped fresh parsley or basil, sliced cherry tomatoes, yogurt or tzaziki, optional, for serving
