Mediterranean Roasted Eggplant Sandwiches
These sandwiches are the ultimate sandwich- roasted eggplant, a sweet, herbaceous sauce, all on toasted bread? Sandwich heaven! These are warm, healthy and crazy good, perfect for lunch, or accompanied by a salad or soup for a heartier meal.
¼ of an eggplant, cut into half moon slices, approximately one centimeter thick
1 sprig rosemary, finely chopped
1 teaspoon sumac
1 teaspoon paprika
½ teaspoon black pepper
¼ teaspoon dried thyme
4 cloves garlic, whole and unpeeled
¼ cup vegetable broth
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or agave
4 slices bread (can easily use gluten-free bread), toasted
