Mini Carrot Cake Oatmeal Cookies

These cookies are chewy, sweet, and irresistible! They also happen to be vegan and gluten free!

2 Tbs ground flax seed + ¼ cup hot water
1 cup oat flour
¼ cup almond Flour
½ tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground ginger
½ cup maple syrup
2 Tbs unsweetened apple sauce
2 Tbs almond butter
1 Tbs molasses
1 tsp vanilla extract
¼ tsp almond extract, optional
2 Tbs coconut oil, melted
1¼ cup rolled oats
¾ cup shredded carrots
½ cup unsweetened shredded coconut
½ cup raisins

Frosting (optional):
3 Tbs maple syrup
2 Tbs tapioca flour
1 cup unsweetened shredded coconut
1 can full fat coconut milk, chilled overnight
