These multigrain pancakes manage to be light and fluffy yet hearty and satisfying at the same time!
Ingredients
2/3 cup spelt flour
1/3 cup oat flour
1/3 cup buckwheat flour
2 tablespoons natural sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup unsweetened almond milk
1 cup full fat, organic cottage cheese
2 large egg yolks
1 teaspoon vanilla
3 tablespoons coconut oil, melted
1/2 cup blueberries
1/3 cup chopped pecans
Pure maple syrup and plain yogurt for serving
