Mushroom Bacon & Poached Egg Salad

Mushroom bacon and crispy garlic croutons with a poached egg
Ingredients
1 lb / 450g mushrooms, sliced about 1/4″ thick. Large brown ones are great.
salt and freshly ground pepper
1/2 tsp paprika
1/2 tsp sugar or a drizzle of honey or agave
1/2 tsp garlic powder
olive oil
2 cloves garlic, sliced thin
2-3 pieces of stale bread (about 1 cup, once sliced)
4 very fresh eggs
water
white vinegar
1 head of butter or romaine lettuce, torn into bite sized pieces
Dressing
1 garlic clove or 1 tsp shallot, minced
1.5 Tbs olive oil
1 Tbs white wine vinegar or lemon juice
1/2 tsp mustard
salt and pepper
