1/2 cup cashews, soaked overnight or for at least 2 hours
1 cup vegetable broth
1 tablespoon extra virgin olive oil
1 Medium yellow onion, diced
4 cloves garlic, minced
8oz button mushrooms, sliced
1 teaspoon thyme
1/2 cup dry white wine
2 tablespoons tomato paste
salt and pepper, to taste
fresh chopped parsley, chopped
