This One Pot Quinoa Veggie Chili is so quick to throw together and is packed with flavor!
Ingredients
2 tablespoons olive oil
1 medium yellow onion, diced
1/2 zucchini, sliced and quartered
1 green pepper, diced
1 red pepper, diced
2 tablespoons tomato paste
2 14 oz cans of diced tomatoes
14oz water
1/2 cup black beans, drained and rinsed
1/2 cup kidney beans, drained and rinsed
1/2 cup chickpeas, drained and rinsed
1/2 cup medium salsa
1 tablespoon chili powder
1/2 teaspoon smoked paprika
1 teaspoon cumin
1 cup cooked quinoa
toppings: avocado, cilantro, sour cream (or greek yogurt), cilantro
