Orzo With Lemon, Asparagus, And Mozzarella

A light, bright pasta salad with asparagus, lemon, and a hint of tumeric.

Ingredients

Dressing:
Zest from 1 lemon
Juice from 1 lemon
3 cloves garlic, minced
Salt and pepper to taste
¼ cup olive oil

Orzo:
1 lb asparagus
4 cups vegetable broth
1 tsp salt
¼ tsp turmeric
1½ cup dry orzo pasta
8 oz fresh mozzarella
