PB & J ice cream sandwiches: raw vegan strawberry ice cream between two perfect flourless peanut butter cookies. Vegan and gluten-free.
Ingredients
3 cups full fat coconut milk
2 cups strawberries – both fresh and frozen work
1/2 cup strawberry jam – omit if you are keeping the ice cream raw
3 tablespoons maple syrup/agave/honey
1 teaspoon vanilla extract (optional)
1 cup peanut butter, preferably no sugar added, crunchy, and organic
1 flax egg (3 tablespoons water to 1 tablespoon ground flax)
1 teaspoon baking soda
3/4 cup cane sugar
