Sweet peaches, creamy mozzarella, and peppery arugula in a tangy balsamic vinaigrette, finished with a sweet balsamic glaze.
Ingredients
Salad
3 peaches, sliced along the pit, then sliced into 1/2-inch-thick half moons (I also peel mine)
8 oz. fresh mozzarella, cut into 1/3-inch-thick slices (or try burrata)
6 oz. arugula
2 tbsp. balsamic glaze (not balsamic vinegar)
salt & pepper to taste
Dressing
2 tbsp. olive oil
1 tsp. dijon mustard
1 tsp. balsamic vinegar
1 tsp. honey
salt & pepper to taste
