Pesto Crunch Pizza

Prep time: 25 min plus 1 hour rising
Cook time: 20 min
Total time: 1 hour 45 min
Serves: 2 pizzas

This cheeseless pizza starts off virtuous, with pesto, mushrooms, onions, and peppers, then we veer off the rails with a crunchy, salty scatter of potato chips on top.

Ingredients

Dough:
3/4 cup lukewarm water
1 tsp yeast
1 tsp olive oil
2 cups all-purpose flour
1 tsp salt

Pesto:
3 Tbs pine nuts
1 large bunch basil, parsley or a mixture of each
1 clove garlic
4 Tbs olive oil
1 Tbs lemon juice
1/2 tsp salt
pinch of crushed red pepper flakes

Pizza Toppings:
1 tsp olive oil
1/2 onion, sliced thin
1/2 red bell pepper, sliced thin
5-6 white button mushrooms, sliced thin
handful Lays plain potato chips
