Piña Colada Pancakes

Paleo pancakes with a tropical flair, using wholesome ingredients like coconut flour, nut butter, and fresh pineapple.

Creamy Coconut Syrup:
1 can (14.5 ounces) coconut milk
3 tablespoons maple syrup

Pancakes:
½ cup coconut flour
1/8 teaspoon salt
1 teaspoon baking powder
1/3 cup nut butter
4 eggs
¼ cup finely chopped pineapple
¼ cup coconut water (or regular water)

Toppings:
2 cups chopped pineapple
½ cup toasted coconut flakes
