Plum and roasted broccoli salad
Plum and roasted broccoli salad with an addictive almond-ginger dressing makes a delicious lunch or appetizer. Vegan and gluten-free.
1 medium broccoli
1 tbsp oil (I used olive oil)
2 ripe plums (I used red plums), sliced thinly
1 zucchini
100 g / 3.5 oz baby spinach
a handful of quick-pickled onion strands or 1 small spring onion, finely sliced
2 tbsp almonds, sliced
salt and black pepper, to taste
black sesame seeds, for decoration (optional)
DRESSING
½ cup roasted almond butter (homemade is best)
2 tbsp tamari / soy sauce
2 tbsp mirin (or 4 tsp maple syrup)
4 tsp rice vinegar or 2 tbsp lime juice
4 tsp finely grated ginger
