Polenta with Creamy Artichoke Pesto- a comfort food that’s incredibly vegan and gluten free, but so cheesy and delicious!!
Ingredients
For the Polenta:
1 cup polenta (medium grain yellow cornmeal)
4 cups vegetable broth (32 ounces)
2 tablespoons nutritional yeast
½ teaspoon sea salt
1 teaspoon lemon juice
For the Pesto:
1 14-ounce can artichoke hearts, drained (about 1¾ cups)
1 cup fresh basil
2 cups baby arugula
¼ cup pine nuts
3 garlic cloves, minced
1 tablespoon olive oil
¼ teaspoon freshly ground pepper
1 tablespoon nutritional yeast
