This Potato Vindaloo Curry recipe is a spicy Indian vegetarian dish that makes a quick and healthy lunch or dinner.
Ingredients
1 Tbsp . cumin seeds
1 Tbsp . coriander seeds
4 black peppercorns
1 tsp . tumeric
2 tsp . paprika
1 tsp . cinnamon
1 tsp . mustard seeds
3 Tbsp . vegetable oil
2 shallots thinly sliced
1 serrano pepper sliced in half
1 Tbsp . tomato paste
8 cloves garlic minced
2 inch knob ginger peeled and minced
3 large Russet potatoes about 2 ½ pounds, cut into 1” cubes
2 cups water
1/3 cup apple cider vinegar
2 tsp . brown sugar
Salt and pepper to taste
Cilantro and mint for serving
