These pumpkin chocolate chip pancakes are vegan and gluten-free. They are the perfect pancakes and also lighter and healthier than traditional pancakes.
Ingredients
1 cup chopped pumpkin or pumpkin puree (150g)
1 cup rice flour (150 grams)
1 cup oat flour (120 grams)
2 tsp baking powder
1¼ cups rice milk (300 milliliters)
2 tbsp maple syrup
1 tbsp coconut oil
1 tsp cinnamon
⅛ tsp ground ginger
⅛ tsp nutmeg
1 clove
½ cup chocolate chips (90 grams)
