Pumpkin Pie Cookies

These Pumpkin Pie Cookies have the flakiest crust and a delicious filling! Perfect for Halloween or Thanksgiving entertaining!

For the Crust:
2 1/2 cups + 2 tablespoons all purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 cup cold butter, cubed
1/4 cup cold water

For the Filling:
3/4 cups pumpkin purée
1/4 cup brown sugar
2 tablespoons maple syrup
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon each of nutmeg, allspice and ground ginger

For Brushing:
1 egg, beaten
