This quick and easy black bean wrap is sure to become a lunch time favorite. It’s made with healthy ingredients that are easy to keep on hand, including frozen veggies and canned beans.
Ingredients
1 large whole grain or gluten free tortilla
1/3 cup salsa (I like Chi Chi’s Thick and Chunky – Mild)
1/3 cup low sodium canned black beans
¼ cup organic frozen corn
¼ avocado, chopped
1 tbs sliced black olives
1 large handful of baby greens (arugula is especially yummy)
2 sprigs of cilantro (optional)
