Quinoa Greek Yogurt Pancakes

A simple recipe for the lightest and fluffiest gluten-free pancakes you can imagine.
Ingredients
1 and 1/2 cup quinoa flour
1 and 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 ounces plain non-fat Greek yogurt
2 teaspoons vanilla extract
1 cup milk (I used unsweetened vanilla almond milk)
1 egg
2 tablespoons maple syrup or 1 tablespoon honey
optional serving suggestion: add 1/2 cup chocolate chips to batter or top with your favorite fresh fruit
