This rainbow veggie burrito bowl is full of healthy veggies and protein-packed black beans. Super quick to whip up for dinner after a long day. Vegan, low fat, pocket-friendly….yes, please!
Ingredients
1 can of black beans, rinsed and drained
1 cup of fresh strawberries, halved
3/4 cup blueberries, fresh or frozen
1 scant cup grape tomatoes, halved
1 jalapeno, thinly sliced
1/4 of a purple onion, thinly sliced
1 big fat yellow bell pepper, thinly sliced
3 carrots, cut with a julienne peeler
