Mmm… a raspberry muffin with a streusel topping. Except this is a healthier, baked oatmeal version!
Ingredients
For the baked oatmeal:
Half an overripe banana, ½-inch set aside
½ teaspoon ground cinnamon
½ teaspoon vanilla extract
1/8 teaspoon molasses
¼ cup almond milk (or other milk)
½ cup rolled oats
¼ teaspoon baking powder
Pinch of salt
¼ cup raspberries, fresh or frozen
For the streusel topping:
½-inch overripe banana (the ½-inch set aside above)
1 tablespoon rolled oats
2 walnut halves
Pinch of ground cinnamon
½ teaspoon maple syrup
