A silky smooth raw blended soup where the sweetness of carrots meets the zippiness of ginger.
Ingredients
4 medium carrots, peeled and coarsely chopped (or ~1 1/2 cups fresh carrot juice)
1 nicely ripened avocado
1″ piece of fresh ginger, peeled
2 cloves garlic
1 tsp coconut oil
1/2 tsp turmeric
1/2 tsp curry powder
pumpkin seeds for garnish, optional
