Red Velvet Ice Cream Sandwiches
Red velvet ice cream surrounded by soft chocolate sugar cookies make for the perfect Valentine’s Day treat.
For the Ice Cream:
6 ounces cream cheese, softened at room temperature
1 1/2 cups whole milk
1/2 cup heavy cream
3/4 cups sugar
1 1/2 tablespoons unsweetened cocoa powder (I used Ghirardelli)
1 tsp. vanilla extract
1 tablespoon red food coloring
1 tablespoon vodka, optional
For the Cookies:
10 tablespoons unsalted butter, softened at room temperature
1 cup granulated sugar
1 egg
1 tsp. vanilla extract
1 cup plus 1 tablespoon all-purpose flour (I used King Arthur Flour)
1/3 cup plus 2 teaspoons unsweetened cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
