Red, White and Blue Overnight Oatmeal Parfaits

These Overnight Oatmeal Parfaits are the perfect way to begin your Fourth of July festivities! They’re really healthy and bursting with unexpected flavors – the white layer has a yummy honey taste, and the blue layer tastes like blueberries and peanut butter! Also, don’t let the ingredients list fool you; these are actually ridiculously easy to make.

Ingredients

For the white layer:
½ cup rolled oats
1 teaspoon chia seeds
1 teaspoon vanilla extract
2/3 cup yogurt
2/3 cup milk of choice
1 tablespoon honey

For the blue layer:
4 teaspoons chia seeds
2 tablespoons rolled oats
2 tablespoons yogurt
2 tablespoons peanut butter
1 teaspoon maple syrup
½ teaspoon vanilla extract
1/3 – ½ cup milk of choice
1 cup blueberries, thawed if frozen
Few drops of blue food coloring (optional)

For the red layer:
6 strawberries, hulled
3 tablespoons milk of choice
2 tablespoons rolled oats
1 teaspoon chia seeds
2 tablespoons yogurt
½ teaspoon vanilla extract

To assemble:
2 tablespoons shredded coconut
1 tablespoon slivered almonds
6 strawberries, hulled and sliced
2 parfait or wine glasses
