Red, White and Blue Presidents’ Day Baked Oatmeal

Serves: 1 serving (two baked oatmeal “muffins”)

Valentine’s Day is over and February 17 is Presidents’ Day! This is a raspberry, apple and blueberry layered oatmeal. With sprinkles and candles because it is Washington’s birthday, after all. And Lincoln deserves a baked oatmeal and candle too!

Other than the sprinkles, these are sugar free!

Ingredients

For the red layer:
2 tablespoons frozen raspberries, thawed
2 tablespoons rolled oats
1/8 teaspoon baking powder
Teeny-tiny pinch of salt
¼ teaspoon vanilla extract

For the blue layer:
2 tablespoons frozen blueberries, thawed
2 tablespoons rolled oats
1/8 teaspoon baking powder
Teeny-tiny pinch of salt
¼ teaspoon vanilla extract
Extra tablespoon of blueberries (optional)

For the white layer:
2 tablespoons rolled oats
1/8 teaspoon baking powder
Teeny-tiny pinch of salt
¼ teaspoon ground cinnamon

To assemble:
1 egg white
Half an apple
Sprinkles and two candles!
