A vegan, gluten-free version of classic rhubarb crisp. A perfectly tart rhubarb filling with a toasted oat and brown sugar topping.
Ingredients
2.5 cups rhubarb, cut into 1/2 inch pieces
1/2 cup sugar
1.5 tbsp corn starch
1 tbsp orange zest
1 tbsp fresh orange juice
3 tbsp gluten free flour
3/4 cup gluten-free oats
1/4 cup melted coconut oil
1/2 tsp cinnamon
1/4 cup brown sugar
1/4 cup oat flour
2 tbsp maple syrup
1/4 cup walnut pieces (optional)
