2 large roasted beets, sliced
1/2 cup low-fat cottage cheese
2 tablespoon roasted sunflower seeds (unsalted taste best)
2 cups arugula or mixed greens
1 teaspoon olive oil
1/2 teaspoon balsamic vinegar
1/2 teaspoon honey
Finely ground sea salt
