Roasted butternut squash noodles with roasted cherry tomatoes, garlic & mushrooms, sprinkled with vegan Parmesan and fresh herbs.
Ingredients
1 medium butternut squash, spiralized on the thin setting
8 oz cremini mushrooms, sliced into thirds
3 garlic cloves thinly sliced
10 oz cherry tomatoes cut in half lengthwise. (2 cups)
3/4 tbsp avocado oil
1/2 tbsp extra virgin olive oil
cooking oil spray
1/4 – 1/2 tsp onion powder
fresh herbs such as basil and parsley
salt and pepper to taste
vegan Parmesan to taste
