A healthy and dairy-free take of the traditional Alfredo pasta sauce! Made with creamy butternut squash, this dish will be sure to please adults and kids alike!
Ingredients
3 cups cubed butternut squash
1 tsp dried sage
1/2 onion, diced
3 cloves of garlic, minced
1/4 extra virgin olive oil, divided in half
1 tsp salt and pepper
1/2 cup grated parmesan cheese, plus extra for serving
2 tbsp fresh lemon juice
1/2 cup vegetable stock
1 lb spinach, finely chopped
8 oz short cut pasta – like rigatoni or penne
