This simple and fresh Roasted Corn, Feta, and Basil Salad is a gluten free, crowd-pleasing side dish!
Ingredients
4 ears of corn, roasted and kernels cut off (I cheated and used pre-made fire roasted corn from Trader Joe’s this time around!)
¼ cup chopped basil
½ cup crumbled feta
1 small shallot, diced
1 tbsp olive oil
Salt and pepper
