This quick and easy tofu scramble is bursting with Thai-inspired flavors. It’s vegan, gluten-free and super peanut-y!
Ingredients
For the sauce:
¼ cup peanut butter
2 tablespoons soy sauce or tamari
2 teaspoons maple syrup, agave or honey
1 teaspoon sesame oil
⅛ teaspoon garlic powder
Pinch crushed red chili flakes
For the scramble:
8 oz. firm tofu
1 cup chopped vegetables of choice
Steamed or blanched kale and/or extra vegetables, to serve
Rice or bread/toast, to serve
