Sesame honey chargrilled vegetables with green curry noodles
Ingredients
Green curry paste (or substitute with shop bought)
2cm piece of fresh ginger
1 chilli (retain or remove the seeds, depending on your spice preference)
a bunch of fresh coriander
4 cloves of garlic
zest of 1 lime
1 stick of lemongrass (fresh if possible)
4 spring onions
2 tsp toasted sesame oil
400ml vegetable stock
1 tin (400ml) of coconut milk
4 portions of soba noodles
2 courgettes
1 large aubergine
1 tablespoon of honey
Handful of sesame seeds
Soy sauce
1 lime
Additional coriander to garnish
