This light and fresh chilled soba noodle salad is naturally gluten free, and combines crunchy vegetables with nutty sesame flavors. It pairs great with all kinds of proteins!
Ingredients
1 packet soba noodles (make sure to buy 100% pure soba noodles if gluten free – I used eden brand)
2 cups trimmed snap peas
1 cup carrots, cut into matchsticks
½ cup chopped green onion, green and white parts
⅓ cup rice vinegar
2 tbsp gluten-free soy sauce (I used Tamari)
2 tsp toasted sesame oil
1 tbsp grated fresh ginger
1 tsp honey
2 tsp red pepper flakes
~2 tsp sesame seeds
