Simple Vegetarian Meatloaf
A delicious and simple vegetarian meatloaf made with nuts and seeds and topped with a savory tomato sauce.
For the Nut Loaf:
4 tablespoons olive oil
3 stalks celery, diced
1 medium yellow onion, diced
3 cloves garlic, diced
Sea salt and ground black pepper, to taste
2 cups ground nuts and seeds
1 ½ cup cooked brown rice
½ cup nutritional yeast
3 eggs, beaten
1 tablespoon tamari or soy sauce
For the sauce:
½ cup organic ketchup or make your own from the NS Cookbook
1 tablespoon organic tomato paste
3 tablespoons Worcestershire sauce
½ cup maple syrup
½ teaspoons sea salt
½ teaspoon ground chili powder
½ tablespoon dijon mustard
¼ teaspoon ground black pepper
