These skinny muffins are a play on the traditional lemon poppy seed – where chia seeds are used in place of poppy seeds!
Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 cup chia seeds
1/4 cup brown sugar
2 Tbsp maple syrup
3/4 cup nonfat plain Greek yogurt
4 Tbsp freshly squeezed lemon juice
2 Tbsp lemon zest
1 egg
1 tsp vanilla extract
1/4 cup milk
