Skinny roasted butternut squash mash

Serves: 12 cups
Perfectly roasted butternut squash with roasted garlic, onions & a touch of vegan butter, mashed with cauliflower. A healthy low carb mash.
Ingredients
2 1/2 lbs peeled cubed organic butternut squash
2 medium/large heads of organic cauliflower chopped up roughly
4 garlic cloves halved lengthwise
1/2 cup finely chopped onion
1 tbsp avocado oil
2 tbsp vegan butter
1/2 tsp salt
additional salt and pepper to taste
cooking oil spray (I use coconut)
