Slow Cooker Black Eyed Peas

Super easy black eyed peas filled with herbs, spices, and aromatics for a wonderful flavor. Perfect for bringing luck to the New Year. Use as a dip for chips, an easy vegan meal, or for topping salads and sandwiches.

Ingredients

1 cup dried black eyed peas
1 cup vegetable broth
1/4 cup diced onion
1/4 cup diced carrot (about 1 medium carrot)
1 bay leaf
1/4 teaspoon pepper
1/2 teaspoon salt
4 sprigs fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon oregano
1/2 teaspoon granulated garlic or 2 garlic cloves minced
