Slow Cooker Potato Leek and Cheddar Soup
Slow cooker potato, leek and cheddar soup is a kicked up and easy version of the more traditional soups out there. Loaded with herbs and seriously creamy, this is the perfect soup for a cold winter’s night. Made in the slow cooker, and meal prep is a cinch.
2 tbsp unsalted butter
3 leeks, cleaned and thinly sliced, white and light green (reserve 2 tbsp for serving)
1 tsp kosher salt
4 cloves garlic
4 sprigs fresh thyme
1½ tsp dried oregano
2 bay leaves
¾ cup white wine
5 cups vegetable broth
4 medium gold potatoes (I used yukon), peeled and diced
1½ cups cream (or half and half)
⅓ cup grated cheddar cheese
extra leeks and cheese for topping
