Smoky Summer Salad with Coconut Bacon

Vegan Coconut Bacon – tastes like real bacon bits, perfect on top of a salad with homemade Balsamic dressing!
Ingredients
For the salad (loose measurements):
1 head butter/bib lettuce
1 small – medium avocado, largely diced
1 medium tomato, largely diced
1/4 cup hemp seeds
diced cucumber
fresh basil
balsamic dressing
coconut bacon
For the coconut bacon:
1 cup large, unsweetened coconut flakes (not regular shredded)
1.5 Tbsp tamari or coconut aminos (for soy free)
1/2 tsp liquid smoke
1 tsp maple syrup
1/2 tsp paprika (sweet or smoked)
Sprinkle of sea salt
