Soft & Healthy Almond Flour Chocolate Chip Cookies

These cookies are gluten free, paleo, vegan AND refined sugar free – easy, simply delicious and made with healthy ingredients!
Ingredients
1 tbsp chia seeds + 3 tbsp water
1 cup almond flour (not meal – meal isn’t as fine)
2 1/2 tsp arrowroot starch or cornstarch
1 tsp baking powder
1/4 tsp sea salt
1 tsp vanilla extract
1/4 cup agave
1/4 cup almond butter
1/3 cup coconut oil (my oil was melted but I think softened oil should work, just not hardened)
1/3 cup vegan mini or regular chocolate chips – I used Enjoy Life Brand
