Spiced Banana Zucchini Muffins
One bowl and about 40 minutes to get these gluten free vegan spiced Banana Zucchini Muffins loaded with fruit, veggies, and spices. The perfect grab and go snack.
⅓ cup (70 grams) coconut oil, melted
¼ cup (54 grams) light brown sugar, packed
¼ cup (60 ml) unsweetened almond milk (or dairy free milk of choice)
2 teaspoons vanilla extract
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup ripe mashed bananas (about 2 small/medium bananas)
1 cup (150 grams) shredded zucchini, or one medium sized zucchini
¾ cups (105 grams) gluten free all-purpose flour
¾ cup (60 grams) oat flour
1 tablespoon baking powder
pinch salt, optional and to taste
2 tablespoons dairy free chocolate chips
