A twist on the Greek dish Spanakopita, which is spinach and feta encased in filo. So I made a tofu scramble with onions and peppers, and added that to the spinach for a tasty alternative.
1 tbs olive oil
1 onion, finely chopped
2 peppers, finely chopped (I used 1 orange and 1 yellow)
1 block of firm tofu, 200-250g
1-2 tbs herb or spice mix
500g frozen spinach
100g grated cheese (vegan or vegetarian)
salt and pepper to taste.
1/2 pack of filo pastry.
2 tbs oil or melted butter for pastry.
