This amazing Strawberry Rhubarb Pie makes the most of seasonal fruits. There are also instructions on the site on making a vegan version!
Ingredients
Crust
2 cups flour, plus additional if needed
1/2 cup cake flour
3 tsp. powdered sugar
1/2 cup butter-flavored shortening
1/4 cup salted butter
pinch salt
1 egg
2 tsp. vinegar
1/4 cup ice water
Filling
2 1/2 cups chopped fresh rhubarb
2 1/2 cups strawberries, hulled and sliced
2 tbs. minute tapioca
1 1/2 cup sugar plus extra for dusting
1 tbs. flour
1 tsp. lemon juice
1/2 tsp. cinnamon
1 tsp. vanilla
3 tbs. butter, cubed
1 tbs. milk for brushing the crust
