Stuffed Shells with Harissa Spiced Tomato Sauce
Add some heat to your traditional stuffed shell recipe by adding some harissa spiced tomato sauce to this tasty vegetarian dish.
15 jumbo pasta shells (you need only 12, but you’ll want extra in case any break)
1 tablespoon olive oil
½ cup chopped onion
4 cups chopped spinach
2 cloves garlic, minced
1 egg
15 oz. ricotta cheese
½ cup shredded mozzarella cheese
¼ cup shredded Parmesan cheese (+2-3 Tablespoons for garnishing)
15 oz. canned tomato sauce
6 oz. canned tomato paste
2-3 tablespoons harissa (adjust based on your spice preference)
1 teaspoon dried oregano
1 teaspoon onion powder
Dash of salt and ground black pepper
