Sumac Roasted Cauliflower Salad is paired with Medjool dates, pomegranate and mint for a salad that is an explosion of flavours.
Ingredients
600 g cauliflower cut into small pieces (1 1/3 pounds)
1 lemon halved
1 tbs olive oil
1 1/2 tsp ground sumac
1 small garlic clove minced
3-4 tbs extra virgin olive oil
1 tsp tahini
1 tsp ground cumin
salt and pepper to taste
2 cups cooked chickpeas
1/4 red onion finely diced
5 Medjool dates finely chopped
2 cups parsley leaves picked
1 1/2 cups mint leaves
1/3 cup pistachios toasted and roughly chopped
1/3 cup pomegranate seeds
