Sun-Dried Tomato Hummus
Hummus or houmous is a Levantine food dip or spread made from cooked, mashed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic. Because it’s delicious and versatile and nutritious and loaded with protein and cheap and easy to make and, and, and … It can be as simple as dipping pita bread into a bowl of hummus or using it in wraps, sandwiches, salads or even rice and pasta dishes.
1 can chickpeas
8 sun-dried tomatoes (in oil)
2 cloves of garlic
2 tbs lemon juice
1 tbs tahini
3 tbs sunflower or olive oil (I use 2 parts sunflower, 1 part olive)
4 – 5 tbs water
salt, pepper, chilli powder to taste
